Bibingka Espesyal

I seldom eat bibingka galapong. I've always preferred having the one made from malagkit (glutinous rice) or during Christmas, the puto bumbong. But suddenly I had cravings for one when I smelled how good it was when I passed by a store selling it.

To satisfy this, I stopped at the store to buy. Quite an unusual place since it was in Andok's (yes, you read it right.. Andok's-- the one selling lechon manok) where I bought my bibingka.

I bought it late afternoon yesterday and kept it in our fridge so I can have it for breakfast today. Their Bibingka Espesyal is made from galapong, topped with salted eggs. They also put margarine, muscovado and white sugar on top after it's cooked in the oven. I don't know whether they have grated coconut since they didn't provide me with one. Anyhow, I opted not to put the margarine and sugar since after my first bite, the bibingka was sweet enough for me.

This one was surprisingly good. It had lots of salted eggs... well that's good news for those who love salted eggs, but not for me since I'm not a big fan. LOL. The bibingka was fluffy, sweet and buttery. I kinda liked the toasted edges too!

Not bad for Php49 only coz it's big enough to make you full. :) They also have regular bibingka for Php25 and mini bibingka at Php20 each.
